The report analyzes the role of food service in the Italian tourism economy, highlighting how it not only serves people but also acts as a powerful driver of economic character, territorial identity, and global soft power. Starting from the Tourism Satellite Account, estimates on the added value determined solely by Italian and foreign tourists' spending on food services are updated. This amounts to 11 billion euros allocated in approximately 3,300 municipalities defined as tourist destinations in the report, based on the presence of at least one accommodation facility. The research emphasizes the strong concentration of value in major art cities (Rome, Milan, Venice, Florence), but also the widespread diffusion of the phenomenon on a national scale. 18 out of 20 regions boast at least one tourist destination capable of generating significant economic value through food service.
A specific focus is dedicated to the role of food service in international tourism. The most significant data concerns the impact of international tourism in the top ten Italian tourist municipalities, which accounts for 67.7% of the total added value. This highlights a high internationalization of the tourism economy, at least in the main destinations.
Particular attention is given to the role of Italian cuisine as a global soft power asset, thanks to the spread of over 90,000 Italian restaurants abroad, although not all can be attributed an \"authenticity stamp\". They are true cultural agencies that strengthen the brand-Italy through gastronomic experience and service style.
Finally, the report dedicates an original reflection on the often overlooked role of Italian bars as a distinctive element of the tourist offer. The bar represents the Italian lifestyle, the \"social ritual\", and offers tourists an authentic experience of sociality, hospitality, and familiarity to complement the cultural and architectural heritage of destinations.
